This soup is very smooth and has a lovely orange flavour.
- 800 g pumpkin
- 500 ml vegetable stock or vegetarian chicken stock
- 1 teasps raw or brown sugar
- 1 cup coconut cream
- zest of 1 orange
Peel pumpkin and cut into cubes,add stock and sugar.Cook until soft and pour into blender.
Add coconut cream and orange zest.Blend until very smooth.
