Berry Pie

Crust
- 1 1/2 cups dessicated coconut
- 1/4 cup rice flour
- Soya Milk and/or rice milk, oat milk etc. enough to just moisten.
- 1 tspn vanilla
- 2 tbspn maple syrup
Method
Mix altogether and press into a greased pie plate. Bake in oven 180 deg. for 15 mins.
Filling:
- 1 kg frozen berries of choice
- Juice of 1 lemon
- 1/4 cup sweetener - Maple Syrup
- 1/2 cup corn flour
Enough water to make a paste with cornflour
Method:
Simmer on stove the berries, lemon juice, maple syrup for 5 minutes then add corn flour paste to thicken, stirring continually and bring to boil for 2 minutes.
